Vintage Nakiri 330mm – Unique Japanese Knife from Kyoto

This vintage Nakiri knife, measuring 330 mm, is a traditional single-bevel blade crafted for precision slicing of meat and fish—ideal for sashimi, nigiri, and fine butchery. Sourced directly from Kyoto, this pièce unique carries both craftsmanship and character, showing light signs of use but remaining in good condition with a very sharp blade.

BLADE SHAPE:
The long, narrow blade is designed for clean, uninterrupted slicing—from heel to tip—maximizing control and preserving texture. A favorite among sushi chefs and now increasingly popular with passionate home cooks seeking to elevate their weekend gatherings.

STEEL:
The cutting core is forged from Shirogami #1 (white steel), revered for its exceptional purity and ease of sharpening. With it’s hardness, this steel delivers a razor-sharp edge and develops a protective patina over time—a hallmark of authentic use and tradition.

LAMINATION:
This knife features ni-mai lamination, with a hard inner core and a softer outer cladding. This structure not only supports a keen edge but also simplifies sharpening thanks to the visible shinogi line, where the two steels meet.

GEOMETRY:
The blade is single-bevel, suitable only for right-handed users, and exemplifies classical Japanese knife geometry.

FINISH:
The blade is polished in the migaki style—clean and reflective, subtly highlighting the steel structure.

HANDLE:
Completed with a traditional D-shaped wa handle made from Japanese magnolia wood and finished with a black water buffalo horn ferrule. The balance and feel in hand reflect the precision and philosophy of true Japanese design.
