As part of the Islay Selection, La Maison du Whisky has specially selected two small batches from the Kilchoman farm-distillery. These 2 whiskies are impregnated with a Portuguese influence resulting respectively from an ageing in barrels of STR and port wines. The STR cask (Shave, Toast, Re-charred) is a barrel that, after containing red wine, is sanded, toasted and burned again, which gives the ageing whiskey inside the typicality of virgin and fresh oak as well as the fruity notes of first filling red wine. The first small batch results from a blend of bourbon (75%), Portuguese wine STR (20%) and sherry oloroso (5%). The result is a whiskey combining tasty notes of citrus and peaty smoke emblematic of Kilchoman and notes of red fruits, spices and milk chocolate, influenced by the former barrels of Portuguese wines STR.
