Founded in 2005, Kilchoman is the first distillery to be built on the island of Islay in over a century. Cradled by the sea spray of Machir Bay beach, the first single malt was born in September 2009. Built on the model of a 19th century "farmhouse distillery", Kilchoman makes a point of handcrafting a peated malt with fine saline accents. The Fino Sherry Matured Edition was aged for a minimum of five years in 20 Fino sherry casks previously used by Bodega Jose y Miguel Martin. Maturation in these ex-Fino casks has given the whisky mineral, woody (oak) and maple syrup notes that blend well with the natural sweetness of Kilchoman's citrus and maritime peat smoke.
