Cantillon Barbera is a lambic made using 250 g/L of Barbera grape pomace from the natural winemaking Belotti family and the Cascina Degli Ulivi winery in the Gavi region of Italy. Barbera grapes provide a fruity, light bodied flavor with high acidity.

Mounbè from Cascina Degli Ulivi is a red wine made from Barbera, Dolcetto, and Ancellotta grapes, a rare variety that adds color and a good sugar content.

Cantillon Ashanti Is a new version of Zwanze 2022 ("Poivre des Gorilles" or "Gorilla pepper") with slightly less pepper, allowing for more balance. About 50 kg of black Gorilla pepper is added to 10,000 L of lambic, resulting in a ratio of about 5 g/L.
