This piece of private land makes very rich, full style chablis. Very limited harvest and yields.

In 2010, Jorge Monzón realized his dream: his own dominio (Águila means eagle) in the eastern part of Ribera del Duero. Near Aranda de Duero in La Aguilera, Jorge's family has owned old vineyards on the sandy soils for years. Jorge and his wife Isabel Rodero bought old, often mixed plots of land in this unique region and now own approximately 70 hectares spread over more than 200 plots. He learned the trade at DRC, Vega Sicilia and Arzuaga Navarro. In the old to very old vineyards, the tempranillo is still regularly grown on its own rootstock. All vineyards are farmed biodynamically. In practice, Jorge often only needs to fertilize lightly organically because these old vineyards are healthy and in balance. The difference in temperature between day and night here is enormous: in summer this rises to 20 degrees. This allows the grape to ripen optimally and create beautiful aromas. The bodega is located in a 15th-century cellar, stylishly furnished with concrete fermentation vats and barriques. Jorge works with a feeling for the regional tradition: he regularly treads the grapes under his feet, ferments (partially) whole bunches, malo comes when it comes naturally, etc. In a very short time, Dominio del Àguila has ranked among the absolute top wines of Ribera del Duero.
