Alexandre de Vergnette-Lamotte, a renowned agriculturalist and winemaker, describes in this book the theoretical and practical aspects of wine production in France before the great upheaval caused by phylloxera and prior to the spread of Pasteur’s insights.

This edition has been significantly improved and expanded compared to the first, and in the 19th century, it was regarded as one of the most important reference works for winegrowers, agronomists, and oenologists.
