One must clearly distinguish between on the one hand the top producer of the highest quality: Domaine William Fevre is not the same as Maison William Fevre', the lower quality trading house is also bottled under this name, the wines are only from purchased grapes of various small producers. For 'Maison Fevre' twice as much is bottled as for the Domaine Fevre, accordingly the difference in quality is also great. The domain is only organic vineyard work, which of course is not the case with 'Maison', so one must not confuse these two parts qualitatively. Of course, we only work with the domain. All wines are spontaneously fermented, all vineyards are processed with strict organic farming, but there is no certification. Before the press there is a few hours of service life, then immediately pressing into a sediment tank, then over 50 percent in wood. Bougros is one of the warmest locations on the slope. The outermost Grand Cru on the left on the slope if you look at it and direct neighbour of Preuses, but much more openly exposed. After fermentation, the wines are then aged with the full yeast in stainless steel. The nose is surprisingly reduced for one of the warmest climats of the Chablis, slightly greenish in the fruit, quince, papaya, mirabelle, green pear, some chalk dust over it. Nevertheless, this is certainly not for purists, but a generous Grand Cru, which also shows what distinguishes such a position from the 1er Cru. Long and straight, strong and deep. A lot of yellow fruitiness in the mouth and a little less vibrating play than Vaulorent and Mont de Millieu, here comes much more strength, creaminess and body. This is finely structured. The maturity is opposed to flesh and acid. A Chablis, as it will probably mature very well and has an incredible amount of potential. 96+/100
