Mosnel's Franciacorta Pas Dosè is a label that perfectly expresses the rigorous and elegant style of a winery, which for years has been among the best interpreters of the Franciacorta area. The cuvée is composed of a majority of Chardonnay to which small percentages of Pinot Blanc and Pinot Noir are added. The meticulous attention to work in the vineyard, the use of partial fermentations in wood, the low dosages and the long refinements on the yeasts allow obtain wines of great finesse and expressive complexity. Clear and vertical, it is ideal to be enjoyed throughout the meal with a seafood menu with delicate flavours. The Pas Dosé Classic Method was born in one of the most interesting cellars in the Passirano area. Mosnel is a historical name of the area and manages a splendid estate of around forty hectares using organic farming. The Chardonnay, Pinot Blanc and Pinot Noir vineyards are grown on gentle hillsides, with exposure facing east and south-east, on soils of morainic origin, rather loose and rich in pebbles. After soft pressing of the grapes, the free-run must ferments in stainless steel tanks at a controlled temperature, except for a small part which ferments in small oak barrels. At the end of a short maturation period, the base wines are assembled and the second fermentation takes place in the bottle according to the Classic Method, with a minimum aging on the yeasts of at least 30 months.
