Their quality is highly regarded around the world. The oldest surviving Japanese kitchen knife dates from the Nara period and is preserved at the Shōsōin Repository in Nara. As knives were consumable tools that were used and sharpened over time, very few ancient examples survive; however, it is believed that they existed even before the Nara period. These ancient knives were similar in shape to Japanese swords and are characterized by their exceptionally long handles. It is said that knives closely resembling the modern Deba, Yanagiba, and Nakiri styles were perfected during the mid- to late Edo period. The Edo period was an era of social stability during which Japanese culture flourished greatly. Alongside this, a rich variety of food cultures blossomed, and the tools suited to each style of cuisine developed accordingly.
