Don Papa 10y is a 10-year-old rum that has matured in charred bourbon barrels. The distillation method is also different, while the classic Don Papa uses a Column Still, or column distillation device (continuous), this rum uses a Pot still – which is actually a periodic distillation in copper boilers known more from the production of whiskey and brandy. Is made from 100% sugarcane molasses from Negros Island and distilled and aged in the unique volcanic climate at the foot of Mount Kanlaon. It is aged in two different types of casks. First in American bourbon oak casks and then in Islay Scotch whiskey casks. This makes it a complex rum with a dark amber color, an intense smoky tone and a spicy finish. It impresses with a distinctive peaty aroma, delicate notes of vanilla, a hint of orange peel and a strong cocoa flavor with a hint of clove and mint.
