The Comandon Rare Cask Finish in Ex-Oloroso Sherry from La Cosecha (2011 Vintage) is a highly exclusive, experimental single cask cognac that bridges traditional French craftsmanship with unique Spanish wood maturation. Produced as a limited edition, it targets collectors and enthusiasts seeking a flavor profile entirely atypical for traditional cognacs.
Origin and TerroirBorderies Terroir: The grapes from this 2011 harvest originate entirely from Borderies, the smallest and most sought-after cru in the Cognac region. Its unique soil yields elegant, highly floral eaux-de-vie.Maison Comandon: Established in 1821, Maison Comandon is an independent boutique producer. They reject mass standardization, prioritizing small-batch single-cask releases where every barrel reflects its own unique identity.
The Dual-Maturation ProcessThe standout feature of this release is its pioneering cask finish method:Initial Aging: The cognac was aged first in brand new French Tronçais oak barrels. The Finish: It was then transferred into barrels that previously held Oloroso Sherry from La Cosecha, an acclaimed boutique sherry producer based in Jerez, Spain.Spanish Oak: Rather than relying solely on the leftover sherry wine for flavor, Comandon specifically used casks built from Spanish oak wood. This adds a deep layer of spices and tannins rarely found in traditional cognac history.Tasting Notes (Sensory Profile)General Profile: Cookie dough and saltiness.Nose: Warm pastry cream, sweet toasted grains, and buttery notes reminiscent of raw cookie dough.Paladar: Rich and full-bodied, heavily featuring notes of traditional Christmas fruit cake. A subtle, pleasing saltiness balances out the natural sweetness of the orchard fruits.Finish: Long, warming, and persistent, concluding with fresh hints of tangerine.
Technical SpecificationsVintage: 2011.Alcohol by Volume (ABV): 41.5% Vol.Bottle Size: 70 cl.Rarity: Because it is a single-cask expression, output is incredibly limited. Depending on the specific cask bottling, some barrels yielded as few as 170 to 205 bottles total. Once sold out, it cannot be reproduced.
