One of the rarest cookbooks of the 17th century.
Part One: The dining room, the sideboard, service, wine, utensils. Broths, purées, coulis, juices, potages, garnishes, pâtés, pies, vegetables, hams, blood sausage, mutton, duck, boar, chicken, pork, eggs, etc.
Part Two: For lean days. Broths, purées, andouillettes, potages, fish, crustaceans, eggs, fried dishes, entremets, etc.
Part Three: Desserts and snacks. Jams, preserves, marzipan, biscuits, cakes, candied fruits and vegetables, etc.
One volume, in-12, of (2) ff., 413 pp., full morocco binding imitating an old-fashioned art binding with gold decorations, fleur-de-lis, royal arms, all edges gilt, gilt roulettes on the edges and spines. Superb reissue of the 1674 edition by Daniel Morcrette in Luzarches. Spine slightly sunfaded. Some rubbing on the binding.
