The treatise harmonizes peasant country cooking with the splendor of court cuisine and marks the birth of the region's typical gastronomy. The work contains hundreds of detailed recipes from soups to meats, from game to sea fish, from legumes to eggs, from poultry to cheeses, ending with creams, sauces, pastries and beverages, and also includes the duties of the "master of the house", a dictionary of kitchen utensils and seasonal instructions. Full leather binding of the period. Title plaque in gold on the spine. Vignette engraved on the title page. Illustrated by a copper plate folded depicting the arrangement of dishes at table (unfortunately largely mutilated). Dimensions 16x10, pages 468. Very good condition.
