Ichiro's Malt Double Distilleries - 700ml

Born from the marriage of casks from the Hanyu and Chichibu distilleries, Ichiro's Malt Double Distilleries is a pure malt that combines sweetness and firmness. A sweetness inherited in part from aging in Japanese oak casks. The firmness, meanwhile, comes from the ex-sherry and hogshead casks in which the Hanyu distillery's malt was matured.

Tasting notes
Nose: Fruity (mirabelle plum, damson) and cereal-like (oat flakes, orgeat), with a hint of anise and cinnamon appearing first delicately, as if dusted on. Then the fruits make a notable return, well accompanied by quince paste. With more aeration, red fruit jelly (raspberry, strawberry) and milk caramel candy enrich the aromatic palette.
Palate: Pear and plum fruit pastes mark the attack, initially warm and spicy (chili pepper). These are followed by herbaceous notes (dry grass) and the bitterness that often accompanies them. The mouth then takes on a new complexity.
Finish: The fruit fades, the flesh giving way to the skin: that of a freshly peeled Comice pear, with its grainy texture. The spices once again take over the mouth, but they are softer and accompanied by a light astringency.
