Duck press or Presse Canard

The duck press is used for preparing Canard à la Presse. This dish was developed in the kitchen of the, still-famous, restaurant "La Tour d’Argent in Paris", in the 19th century. An important part of the sauce is the juice pressed from the duck's carcass. The Presse Canard was specially developed for this purpose.
