The Maturation Process (Cask Finish)The big secret behind this 18-year-old whisky is the double maturation technique (known as cask finishing) perfected by the distillery:Initial Cask (American Oak): The whisky spends most of its 18 years in traditional American oak barrels (ex-bourbon). This softens the spirit and develops Balvenie's classic profile, rich in notes of honey and vanilla.Finishing Cask (Pedro Ximénez Butts): The liquid is then transferred to casks that previously held Pedro Ximénez (PX) Sherry wine. This Spanish wine, made from sun-dried grapes, is intensely sweet and infuses the whisky with complex layers of dark fruits and spices.
