The Jolivet family entered the world of wine in 1926, the year the Jolivet and Sons Trading Company was founded.
Ancient agent for the House of Champagne Pommery, Pascal Jolivet founded his own estate in Sancerre in 1987.
Since producing his first vintage in 1991, Pascal Jolivet has steadily developed his domaine: today at the head of 95 hectares, the estate stretches from Pouilly-Fumé to the Touraine and from Sancerre to Pouilly-sur-Loire.
The Pascal Jolivet Cuvée Exception is a Sancerre wine whose prestige comes from three illustrious plots: Chêne Marchand in Bué, Monts Damnés in Chavignol and Clos du Roy in Crézancy.
This mosaic of terroirs offers a unique combination of chalky soils conducive to the finest expression of Sauvignon Blanc.
The cultured, conscientious viticulture there is practiced with rigor, thereby preserving the natural balance of the soils and the integrity of the berries.
Purity and elegance: Pascal Jolivet created the principle of bio-vinification: after a very light settling, the juice is fermented with indigenous yeasts and sur lie aging plays a fundamental role in concentrating and enhancing the wines’ complexity.
In 2013, after the departure of his historic oenologist, Pascal hired a very young and talented Italian oenologist, Valentina Buoso.
The gamble paid off; from the first 2013 vintage, Valentina produced remarkable work—the Sancerre is extremely pure, refined with immense subtlety.
The Sancerre Exception Pascal Jolivet is a rare white wine produced only in great vintages from a selection of the estate’s finest grapes.
