Prosper Montagné - Larousse Gastronomique - 1949

This copy of the Larousse Gastronomique reproduces in full the text of the original edition of 1938, in a print run by Les Presses Larousse in October 1949. Written by master chef Prosper Montagné and benefiting from prefaces by Auguste Escoffier and Philéas Gilbert, this imposing encyclopedic dictionary brings together the entire culinary knowledge of its era. The work has retained its superb original publisher's binding, characterized by its cold-stamped motifs depicting a roasting scene on the front board and cutlery on the spine. Its rich iconography, including 16 color plates (including the splendid seafood plate) and 1850 in-text engravings, makes it an exhaustive historical document on techniques and table setting in the mid-20th century. A grand classic of gastronomic bibliophilia, presented here in a thoroughly satisfactory state of preservation.

Good general condition. The binding is solid and the gilt lettering remains vivid. Signs of wear and normal rubbing are visible on the heads, corners and edges of the boards. The interior is in good readable condition; there are foxing and noticeable browning along the margins of the title page, fading toward the rest of the work.
