Alcohol by volume: 14% vol.
Organoleptic profile
Visual examination: Deep, bright ruby red with violet reflections typical of the youth of Sangiovese.
Olfactory assessment: Fresh, elegant and terroir-driven. Aromas of ripe red fruits such as cherry, sour cherry, and violet, accompanied by a delicate balsamic note and a hint of light spice deriving from aging in large oak barrels.
Palate: Dynamic, balanced and well-structured. A pronounced acidity typical of the region provides freshness, supported by fine tannins and a long, savory and persistent finish.
Food pairings
Tagliata and grilled red meats, Fiorentina steak
First courses of Tuscan cuisine (pappardelle with wild boar ragù or hare)
Tuscan cured meats (finocchiona, Tuscan prosciutto)
Medium- to long-aged cheeses (Pecorino Toscano DOP)
Service
Glassware used: medium-sized red wine glass / Chianti Classico glass.
Serving temperature: 16 - 18 °C
Winery and producer curiosities
A Millennial Story: The name "Dievole" first appears in a lease agreement dated 1090. It literally means "God wills" (or "God desires"), making the estate a historic site with almost a thousand years of winemaking tradition.
Biological philosophy and terroir: Dievole is located in the municipality of Castelnuovo Berardenga, in the southern part of Chianti Classico. The estate has fully converted its vineyards to organic farming and uses large 41 hl French oak casks for aging, preserving the pure and varietal expression of Sangiovese.
