*DESCRIPTION:*
Exceptional lot of *5 bottles of Hüpnos 2019* from Sous le Végétal - one of the most sought-after natural wine projects in the Mediterranean.

Sous le Végétal is the collaboration between two legends of the natural wine scene: *Patrick Bouju (Domaine La Bohème, Auvergne)* and *Jason Ligas (Domaine Ligas, Pella)*. They decided to rescue abandoned Muscat vineyards on the volcanic island of *Samos, Greece*, 1.5 km from the Turkish coast, at the foot of Mount Karvounis.

Biodynamic and organic farming ( uncertified), nocturnal manual harvest to preserve freshness, volcanic basalt and limestone soils.

*Hüpnos 2019 Winemaking:*
100% Muscat Blanc à Petits Grains - 40 days of skin maceration - spontaneous fermentation with indigenous yeasts in stainless steel and barrel - unclarified, unfiltered, *no added sulfites* - Aged in inox.

The result is a hypnotic orange wine (hence the name Hüpnos = god of sleep), Top 3% worldwide on Vivino with 4.2/5.

*Tasting notes:*
Dirty golden color. Intensely aromatic nose: elderflower, jasmine, apricot, heather honey, popcorn, tropical fruit (mango, passion fruit) and a very saline volcanic mineral background. On the palate it is vibrant, textured from the maceration, vertical acidity, very long and saline finish. Highly gastronomic.

A cult wine, tiny production and already impossible to find in 2019. Perfect to lay down for another 5-7 years or drink now at its peak.
