An exciting two-volume set enriched with 199 figures interleaved in the text, concerning a substantial study of the alterations, degradations, substitutions, and frauds that may affect products intended for food, medicine, pharmacy, and commerce at the end of the 19th century.
Conceived in the form of a methodical dictionary, the work gathers numerous entries devoted to very diverse substances and seeks to determine, for each of them, the characteristics that allow recognition of an authentic product, the natural alterations it may undergo, and the deliberate falsifications practiced in order to reduce its production cost or to modify its appearance.
The analysis notably covers foodstuffs, plant and animal raw materials, chemical products, pharmaceutical substances, and various common goods whose quality could be compromised by the addition of foreign matter.
