Tempranillo 70%, Garnacha 20%, Mazuelo y Graciano 10%
"Most of the grapes come from their own vineyards, along with a small proportion bought from small winegrowers in Rioja Alta who have been associated with the winery for years. Manual harvest and selection of clusters upon arrival at the winery. Each grape variety is vinified separately. Alcoholic fermentation in 10,000-litre wooden vats, without temperature control or the addition of yeast, after which it is transferred to tanks where malolactic fermentation takes place. Transferred again and aged for 30 months in semi-used 225-litre French and American oak barrels, most of them made by the winery's own cooperage. Traditional clarification with fresh egg whites before bottling. A minimum of 12 months of aging in a bottle rack in the drafts of the winery in Haro before being marketed."
