Chassagne-Montrachet – Domaine Bouzereau Philippe
100% Chardonnay
In this wine, the Chardonnay grape is wrapped in shimmering gold! It displays a bright color with green highlights. Aromas of hawthorn, acacia, and honeysuckle blend with verbena, hazelnut, and—at times—buttered toast. These wines possess a pronounced minerality, featuring notes such as flint. With age, they develop nuances of honey or ripe white fruit. They are well-rounded, often with a lush entry on the palate; the fleshy volume is frequently accompanied by gentle roundness and power.
Its richness and power make it an ideal partner for delicate white meats, such as poultry or veal in sauce. Fish dishes—whether served with well-spiced couscous or in Asian-style curries and stir-fries—are also excellent pairings. Salmon, being highly aromatic in its own right, harmonizes particularly well, as do langoustine, lobster, and even foie gras.
Located in the southern part of the Côte de Beaune, Chassagne-Montrachet shares the title of "king of the world's dry white wines" with Puligny and the divine Montrachet (pronounced "Mon-ra-shay").
The broad slopes of these communes bring out the finest expression of the two Burgundian grape varieties—Pinot Noir and Chardonnay—which grow side by side here.
Extensive marble quarries, forming a sort of rock face, were the source of the pink and beige paving stones used for the Trocadéro building in Paris and, more recently, the Louvre Pyramid.
The Chassagne-Montrachet AOC was established in 1937. It encompasses a few vineyard plots in the neighboring village of Remigny that share the same soil characteristics. At elevations between 220 and 325 meters, the rock sequence—from top to bottom—consists first of Rauracian, then Callovian, and finally Argovian strata. The soils of the various *Climats* (parcels with distinctive qualities) range from limestone pebbles and marl to sandy soils, all resting on a Jurassic bedrock.
