Flammarion edition of 1953 of L’Art culinaire français, an imposing treatise bringing together the recipes and advice of the great names of French cuisine, among whom Escoffier, Pellaprat, Montagné, Urbain-Dubois, Ali-Bab, Darenne and Duval.
The work comprises 1,046 pages, 3,750 recipes and tips, 216 black-and-white engravings and 500 color plates. It covers cooking, pastry and preserves, but also culinary techniques, equipment, menus, wines, service and the arts of the table.
Beautiful red publisher’s binding with a gastronomic decoration blind-stamped, particularly characteristic of this edition. The interior is richly illustrated: photographs of dishes, preparation techniques, utensils and professional equipment.
An exemplar well preserved for its 73 years, with some scuffs and signs of use on the binding visible in the photographs. Interior clean on the pages examined. No dust jacket.
