At tasting, “Les Pucelles” by Alain Chavy offers a profile of overwhelming complexity:
The Robe: A magnificent pale yellow-gold color, of clarity and diamond-brilliance with silvery reflections.
The Nose: Captivating, airy and of extreme refinement. It bursts with a bouquet of white flowers (honeysuckle, jasmine, peony) and sweet citrus zest (blood orange, candied lemon). On aeration, it develops noble notes of marzipan dough, fresh butter, white truffle and roasted hazelnut, supported by a fine trace of wet chalk.
The Mouth: The attack is a satin caress. The mid-palate unfolds a dense, rich and deeply spherical texture. It is an enveloping wine, of unreal silkiness. Yet the stroke of genius of the Pucelles lies in its underlying freshness: a ripe, saline acidity traverses this fat, giving it momentum, distinction and a perfect aristocratic balance.
