The Coste-Ubesse wine comes from two adjacent plots of Syrah totaling barely 3 hectares and cultivated Bio. This parcel located in the commune of Saint-Mathieu-de-Tréviers in Hérault is a hillside of clay-limestone rocky slope on fissured marls oriented to the north (Ubesse = Ubac, meaning north in Occitan).
“My grandfather Eugène, roaming his vineyards, taught me to observe the cicadas, as if paired with the bark of an arbutus tree, a holm oak, or a great Aleppo pine. They extend their roots beyond the calcareous pebbles into the soft clay of Coste-Ubesse, the north-facing slope. This orientation tempers the deadly heat of the summer sun; the estate shelters the plants from sudden winter onslaughts. Everything here favors the tranquil growth to full ripeness of the grapes that make my wines.”
