Organoleptic Sheet
Type: Still Red Wine (Bordeaux Blend)
Typical grape variety of the vintage: Majority Cabernet Sauvignon and Merlot, completed by very small percentages of Cabernet Franc and Petit Verdot.
Visual examination: Intense deep ruby red, with lively purplish reflections due to the excellent structure of the 2018 vintage.
Olfactory examination: Nose rich and complex; pronounced notes of black forest fruits (blueberry, blackcurrant, blackberry), hints of sweet spices, vanilla and woody notes integrated with balsamic nuances, graphite and a touch of dried tobacco.
Tasting examination: On the palate it is structured, full and silky. The tannins are dense but ripe and elegant. It has a pronounced freshness and a prolonged finish with a lingering note of dark fruit and subtly toasted tones shaped by the wood aging.
Recommended glass and serving: Bordeaux glass (one large bowl with a wide belly and slightly conical opening to enhance the complex aromas and to allow the wine to aerate). Serving temperature: 16 - 18 °C.
Suggestion: It is advisable to uncork the bottle about 1-2 hours before consumption or decant briefly if consumed young.
Food pairings: red meats: Florentine steak, peppercorn fillet, beef roasts and grilled meats. Game: roasted duck, duck breast (magret de canard), venison or wild boar stews. Cheeses: matured hard or semi-hard cheeses (e.g. aged Gouda, Comté, Parmigiano Reggiano).
Curiosity about a historic story: The estate’s origins date back to the 16th century (around 1500), making Château Sénéjac one of the oldest properties in the Haut-Médoc region.
The Cordier family signature: Since 1999 the property has belonged to the Bignon-Cordier family, already linked to the historic Château Talbot (Grand Cru Classé of Saint-Julien).
An excellent vintage: 2018 in Bordeaux is remembered as an exceptional vintage, characterized by a rainy spring followed by a hot and sunny summer that allowed perfect phenolic ripeness of the grapes.
