Lot of 3 bottles from one of the most sought-after Jura cuvées today.

*Domaine François Rousset-Martin (FRM)* - Nevy-sur-Seille, just a short walk from Château-Chalon. Winemaker and biologist, trained in Beaune, took back the family estate in 2007. 10 hectares in total, left the cooperative in 2018 to vinify everything himself. Absolute specialist in Savagnin, works biodynamically, parcel-based fermentations, minimal intervention.

*La Cuvée du Professeur 2020:*
100% Savagnin from old vines on grey marne and limestone. His tribute cuvée, the purest and deepest. Vinification and aging of 15 months in Burgundian barrels on lees, ouillé (no veil), unfiltered and unfined. Only 12.5% ABV.

Tasting: ouillé wine but with a subtly elegant oxidative touch. Exotic nose, walnut of Grenoble, almond, dried apricots, smoke. On the palate with enormous volume, straight, saline, with noble hints of citrus and candied fruit. Very long finish, umami and highly saline. For connoisseurs of natural Jura. Will age perfectly 10-20 years.

Vintage 2020: Warm and concentrated in Jura, producing wines with density and acidity. Score: 96/100 La Revue du Vin de France, 112$ CAD at SAQ, 85-90€ price in stores in Europe. Increasingly hard to find.

Bottles pictured, stored in climate-controlled cellar in Barcelona. Perfect fill levels, pristine black labels, perfect capsules. Bottles with the JURA relief embossed in glass.
