Le Domaine de Chevalier Blanc 2016 embodies the excellence of dry white wines from Pessac-Léognan, a appellation renowned for the finesse and complexity of its crus. Located in Léognan, in the heart of the Graves, this Cru Classé benefits from a unique terroir composed of fine gravel, black sands, and a well-drained clay-gravel subsoil. This poor, well-exposed soil forces the vine to root deeply, concentrating aromas and minerality in every berry.
The 2016 vintage was shaped by exceptional weather conditions: a wet spring favoring optimal water reserves, followed by a dry, sunny summer allowing perfect ripening of the grapes. The harvests, carried out by hand in crates with several successive triages, ensure a rigorous selection of the bunches. Vinification is carried out by direct fermentation in barrels, followed by 18 months of élevage, one-third of new wood, with regular bâtonnage of the lees to develop complexity and volume on the palate.
The domaine’s traditional blend is 70% Sauvignon Blanc, providing vivacity and citrus notes, and 30% Sémillon, imparting roundness and depth. On tasting, this wine reveals a pale, crystalline golden robe, a generous nose of grapefruit, pear, exotic fruits and mineral touches of flint, then a broad, silky palate, balanced by a fresh acidity and a long, saline finish.
This Pessac-Léognan Blanc 2016 pairs ideally with refined dishes: roasted turbot, grilled lobster, pan-seared scallops, Bresse chicken in cream, or aged hard cheeses like Comté 24 months. Served between 10 and 12 °C, it can be enjoyed now or kept in the cellar until 2036 to reveal its full aromatic complexity.
