IJsvogel Whisky Cask 006 (also known as the 6th bottling) is a Dutch Single Malt whisky from the De IJsvogel grain distillery in Arcen, Limburg. This specific expression was distilled in July 2016 and bottled in September 2020. (Bottles 050 and 051)
Description
The whisky underwent a full maturation period of 50 months (just over 4 years) in a single, highly flavorful Pedro Ximénez (PX) Sherry cask. Because PX sherry is an exceptionally sweet and syrupy type of sherry, the oak of these casks becomes saturated with deep, rich fruit aromas. This gives Cask 006 a distinctive sweet and layered character. The whisky is bottled at 46% ABV and is non-chill filtered.
Tasting Notes
Thanks to the intensive maturation in the PX sherry cask, this bottling exhibits the following flavor characteristics:
• Nose: Rich and inviting aromas with distinctively sweet notes. You can smell dried fruit, warm raisins, and hints of oak.
• Palate: Full-bodied, syrupy, and harmonious on the tongue. The influence of the Pedro Ximénez sherry is clearly evident, with prominent flavors of raisins, figs, and ripe dark fruits, subtly balanced by notes of nuts and lightly spiced wood.
• Finish: Long, warming, and smooth, with the fruity sweetness of raisins and a mild wood-spice character lingering elegantly.
