Description from the seller
HORTENSE
doc bolgheri superiore rosso
80% Cabernet Franc - 20% Cabernet Sauvignon
WINEMAKER
Eric Boissenot
VINEYARD TRAINING METHOD
Guyot.
SOIL COMPOSITION
Sedimentary rocks consisting of limestone, marble, and clay with interlayers
of sandstone and siliceous rocks.
VINIFICATION AND AGEING
After being hand-picked, the grapes, previously selected in the vineyard,
undergo further selection in the cellar. The grapes ferment in
temperature-controlled, truncated-cone stainless steel
vats. Fermentation occurs with spontaneous yeasts. Aging in
second- and third-passage barriques for 12 months completes the wine's maturation.
It pairs well with robust, flavorful dishes, such as marinated game and roast
wild boar, braised guinea fowl, or duck. Excellent with roast veal
or pork seasoned with a blend of Mediterranean herbs, including bay leaves,
juniper berries, rosemary, and sage, which enhance its complex aromatic
notes. Its complexity is also enhanced with mature, rich cheeses
such as aged pecorino.
