Hand-picked at optimum ripeness, the grapes are destemmed, crushed and transformed into wine through careful maceration designed to extract colour, tannins and aromas. This process is enhanced by constant churning during fermentation, which takes place in traditional vats (lagares) at controlled temperatures between 28-30°C, until the desired level of sweetness (baumé) is reached. At that moment, grape brandy is added to create the final fortified wine.
This high-quality wine is produced by blending wines from different harvests to achieve the full array of sensory qualities typical of aged Tawny Ports. Each component wine has matured in oak casks for varying periods, with the average age defining the age declared on the label. The final blend expresses all the character and complexity acquired during ageing in wood.
It shows a vivid brown colour with greenish hues. The nose reveals intense aromas of dried fruits, delicate spice notes and sweet hints of honey. On the palate it is full-bodied, unctuous and velvety, exuding charm and elegance that extend into a long, complex finish.
When served slightly chilled, it is an ideal choice for starters such as strong cheeses or pâté. Its velvety texture and unique aromas pair remarkably well with main dishes containing dried fruits. Irresistible with foie gras accompanied by aubergine and walnuts. A superb match with a wide variety of desserts, including toffee brownie.
