VINIFICATION
Total stalking, crushing and pressing. Winemaking in an open spout. Fermented entirely in a stainless steel tank with controlled temperature and pumping times. Interruption of fermentation by adding neutral wine alcohol (96º). Fortification after 6 to 7 days of fermentation to obtain the desired amount of sugars. Vinification made according to traditional methods. Aged using the traditional Canteiro system, in French and American oak casks of different capacities. Batch formation, clarification, filtration and bottling
TASTING NOTES
Attractive and bright golden color with evolving tones. Very delicate, fruity and with some floral notes. Long, dry finish with notes of honey and orange peel.
SERVING
Does not require decantation. With a marked acidity, served slightly chilled, it is excellent as an aperitif. It goes well with light soups and consommés, Serrano ham, smoked game, mushrooms sautéed with garlic, pâtés and dried fruits such as almonds and walnuts.
HISTORY
"Justino’s Madeira Wines, S.A." was formed as a limited company in 1953, although it had been in existence since 1870 in Madeira as a private family company, when it was known as "Justino Henriques". This makes it one of the oldest producers and exporters of Madeira Wine, internationally known for the quality of its wines. In 1993, it became internationalized, making an association with one of the larger French groups of wine and spirit distribution – C.O.F.E.E.P also knows as La Martiniquaise - building a new winery with the intention of improving the conditions in which its wines are made, in particular the process of vinification, production and aging. This large, modern and functional winery has been equipped so as to combine traditional methods with the most advanced technology available. Today, Justino’s Madeira holds one of the largest stocks of Madeira wine on the island, including high quality wines aged in oak casks, which enables the company to meet the requirement of the most demanding and selective consumers. Over the years, Justino’s Madeira Wines, S.A. has become one of the leading producers and exporters of Madeira Wine thanks to the acknowledged quality of its wines and the substantial increase in its production capacity.
