VINIFICATION Its fermentation takes place in stainless steel vats, where the grapes macerate and are churned with their skins on, at temperatures between 16-18ºC, to produce a white wine with colour and structure that can sustain a prolonged ageing in oak. The fermentation is halted by adding grape brandy, creating the fortified wine. A wine of high quality, made from one single harvest. A Colheita wine matures in oak barrels for periods of time that can vary, but never less than 7 years. It is then bottled and sold according to the demands of the market. TASTING NOTES Golden yellow colour. Delicate and soft on the nose, with notes from ageing in wood perfectly combined with aromas of stone yellow fruit and hints of citrus. In the mouth it is velvety and distinctive, showing a refreshing acidity that mingles well with its sweetness. An elegant and delicate finish. SERVING Enjoy it with an almond, lemon and poppy seed cake, or milk and hazelnut chocolate nocciolato with basil ice cream. Wonderful just on its own, after a meal. To assure its full quality and flavour, it should be stored in bottle for as little time as possible, and should be drunk soon after purchase. Best served at a temperature between 8 and 10°C. HISTORY In 1636, a journey took place between Hamburg and Portugal that would prove to be the root of a long story: Nicolau Köpke arrived in his new country as Consul General of the Hanseatic Cities. Two years later, in 1638, he signed the first bottles of wine sent to Northern Europe. The purchase of a farm in Douro, in 1781, marks the transition from a purchasing company to a large wine producer. Port Wines are gaining importance in the company, quickly becoming the main business. Nicolau Kopke & Co. becomes an example of innovation, integrating wine production and trade in the same company. In 1841, the firm assumed the name of C. N. Kopke, a name which remains as such to this day.
