MASTER DISTILLER: António Cuco.

INGREDIENTS: Juniper, maçã Bravo de Esmolfe silvestre, verbena dália (lima), casca de laranja e casca de limão, semente de coentro, cravo-da-índia, baunilha, canela.

DESTILLATION PROCESS
Starts from a distillation based on fresh Esmolfe Bravo apple. All botanicals are distilled separately and the alcohol content is subsequently corrected and a blend is made with all the distillates. After this, a post-distillation infusion is made with cinnamon and vanilla.

TASTING NOTES
It is a smooth gin with a unique aroma, dominated by citrus flavors – coming from the orange peel –, the soft sweetness of the Bravo de Esmolfe apple and vanilla, as well as the identifiable juniper. The subtlest touches of this gin come from cloves and coriander seeds, and at the end of the tasting, the slight spiciness of Lúcia-Lima makes itself felt.

HISTORY
What distinguishes Sharish Gin is the fact that we use mainly fresh and local products, as well as the infusion/distillation method used with traditional Portuguese stills and a slow distillation process that favors quality.
It is not possible to think about gin without thinking about man. And it’s story of it’s creator, António Cuco, is as authentic as he is. During a period of unemployment and thanks to an incredible capacity for entrepreneurship, antónio cuco went from a simple connoisseur of the gin drink to a true “alchemist of flavors”, being able to create an emblematic and internationally recognized brand.
As inspiration, António Cuco went back to recovering smells and flavors from his childhood, such as the Bravo de Esmolfe apple, which his great-grandmother gave him to eat at the Borba market, and the lemon verbena, an aroma that reminded him of the tea that S. Manços prepared it at snack time. He combined these memories with botanicals, citrus fruits and other ingredients, all from his land, to arrive at the final formula for his Sharish Gin.
Sharish Gin, whose original recipe remains unchanged, has gone from a homemade drink, made to give just to a few friends, to a premium drink of recognized quality and a distillery with 1,400 m2 and a turnover that amounts to R$1,300,000. 00 (2018). It is at the Sharish Gin distillery that there is the first and only Gin Interpretation Center in the Iberian Peninsula, where more than 6,000 people have passed through in just one space and in just one year. Sharish is a growing brand preparing for the future.
