Wine made from selected vines where the grapes have reached exceptional ripeness. In 1995, we discovered that certain vines produced grapes whose flavor was markedly different from that of the surrounding plants. They conveyed a sense of fullness and volume, with profiles closer to a finished wine than to a grape. Two years later, we produced our first Cirsion, which was not released to the market, and found that with a short period of aging it achieved an incredible silkiness and an extraordinary fruit complexity. Each harvest, we walk the vineyards in search of this curious natural rarity and, one in a thousand, the grapes for Cirsion are selected.
