After years of experience producing still wines, in 2017 he presented his first sparkling wine, Philippe Pacalet Bulles Par PP. Following his traditional winemaking method, the wine is produced by pressing the whole bunches and carrying out the first alcoholic fermentation with indigenous yeasts in Burgundy oak barrels for four months without the addition of SO2. The second fermentation took place in February following the harvest, and the wine was aged in the cellar using the traditional method on the lees and in the bottle.
