The pinot noir blossoms wonderfully on the limestone soils of the Sancerre appellation and under the hand of the Vincent Pinard estate. Once harvested by hand and strictly sorted, the entire harvest is vinified with care. This method, which involves preserving the stalk, allows wines with a nice structure to be made. An intracellular fermentation (= in the grains) is carried out, as do some of the greatest winemakers of Burgundy, by the way. The wine is then aged in used oak barrels for a year and a half. Fine, delicate, fruity, crunchy, this wine deserves to rest for a few years in the cellar.
