Inizialmente prevista come un’annata precoce come la 1997, la 2007 si è rivelata invece tardiva per quanto riguarda lo sviluppo della celebre botrytis cinerea nel sud della regione di Bordeaux. A lungo attesa, la muffa nobile si è instaurata dalla fine di settembre fino all’inizio di ottobre. Come nel 1967, il 2007 si è quindi concluso tardi a Château d’Yquem, con una botrytis perfetta. The palate reveals one of those vintages that shape-shifts into an apparently drier style than it is, largely thanks to its uber-racy backbone of freshness and layered mineral-inspired flavors, finishing with a regal, satin-textured savoriness. Difficult to resist now, this will be one of those Rip Van Winkle vintages that can be predicted to cellar not just for decades but for generations.
