The art and mastery of maturation? Dalmore 25 Year Old is the perfect illustration: imagine two superb nectars, initially matured in new American oak barrels, then separated to age respectively in 25-year-old Palomino Fino sherry casks and 1980 first-fill bourbon casks, finally reunited to complete their woody journey in Portuguese Tawny Port casks. A delight of exotic fruits, marzipan, vanilla, and chocolate truffles, bearing witness to this singular voyage through woods and ages.
Profile: Full-bodied, creamy. Dried figs and dates, rice pudding, noble spices (saffron, cumin), and heady flowers (honeysuckle, lily). Candied citrus fruits (lemon, orange), Russian leather, and camphor.
Tasting Notes:
Nose: Full-bodied, creamy. Notes of dried figs and dates, rice pudding, noble spices (saffron, cumin), and heady flowers (honeysuckle, lily) precede candied citrus fruits (lemon, orange), Russian leather, and a hint of camphor. The first impression expresses itself powerfully. It evolves toward bourbon vanilla and roasted coffee.
Palate: Fine, distinguished. It surprises with its heightened exoticism (passion fruit, mango). With freshness, the mid-palate reveals new fruits (peach, apricot, mirabelle). With power, it develops on dark chocolate and bold spices (clove, pepper). The finish is delightfully honeyed (linden, heather).
Finish: Long, silky. Its balance is perfect. Grains of salt settle on the tongue while ripe fruits (plum, pear) envelop the palate. It gradually oxidizes, releasing notes of cherry brandy and prune. The retronasal aromas are indulgent (tarte Tatin) and the empty glass is balsamic (cedar, Landes pine).
