Dom Pérignon is only available as a vintage champagne and is only produced in exceptional years. Each vintage is a unique creation, expressing both the character of the year and the character of Dom Pérignon. After at least eight years of aging on the lees in the cellars, the wine enters its first phase of interest, Plenitude 1, presenting relatively young fruit and a broad texture thanks to contact with the lees. The signature aroma of Dom Pérignon is that smoky touch, a result of reductive vinification, in which extremes are taken to keep each stage of the winemaking process oxygen-free. With each sip of Dom Pérignon you find this purity of fruity character; depending on the vintage, Pinot Noir fruit usually predominates, which are red fruits such as raspberry, peach and dark cherry. Chardonnay adds a layer of chalky texture and delicious fruits in the yellow spectrum, such as plum, apple and tropical notes of pineapple.
