Another jewel not to be missed, preserved in our Rioja wine cellars

Federico Paternina, Ollauri Blanco Seco

Winemaking: Initial fermentation in wooden barrels from the founding period between 18 and 24 months before racking for subsequent ageing. It remains for a minimum of 36 months in used American oak barrels of various sizes, mainly 225 litres. Bottled directly from the barrel. A minimum of 2 years of ageing in the old cellars of the winery, in Ollauri, before being marketed.

Tasting notes: High quality cork, bright yellow colour, very clean, with golden and greenish reflections. Enormous paleness, lively, refulgent. Fine, permanent tears, with a clear sensation of thickness. The unaccustomed transparency and lack of oxidation of a wine more than 50 years old defies all logic.

The nose is initially a little shy, in need of aeration after so much time in the glass. There is not the slightest hint of reductive notes: no wax, no honey, no nuts, none of the usual tertiary battery usual in this kind of wine... Very clean, structured by a light citrus note reminiscent of lemon brine that gains in intensity and leads to a very fine creamy patina of puff pastry and a seen-and-unseen stone fruit. The wine seems to be on delicate terroir as hints of white flowers and a fragrant trace of acacia appear, but unexpectedly it takes a complete turn. The retruecano is pure naked terroir, minerality and chalky verticality, flint, smoke, chalk, of an overflowing, almost stinking intensity that occupies everything and leaves no room for anything else. Exciting and authentic!

On the palate it maintains Paternina's hallmarks: that intense core of freshness, nerve and the desire to keep the oak at bay so that it contributes the minimum. And it does! Thick, almost creamy, with ripe fruit and a citric acidity that borders on the perfect. It is at a proverbial moment of enormous roundness and integration of all its elements. There's not a single toastiness out of place, not a bitterness.... Flavourful, spherical, giving that lightly fizzy note so typical of Paternina's whites. A great wine from beginning to end!!!!
