After decuvage, the wines are sunted into new half-muids and a wine, where they will carry out their malolactic fermentation. Aging in these containers will last a year, which is well suited to the syrah since the wine is not excessively woody. After this aging phase, the wines remain in the tank for another six months in order to decant them naturally before bottling.
