For this one, 3 Fonteinen macerated an old Belgian damson variety - Vroege Tolse - which they've handpicked with Willy Verlinden on the Wijngaardberg in Wezemaal, just outside Leuven. They macerated the plums for almost six months on three-year old lambik. While bottling, they blended with more two-and-ahalf-year old lambik, rendering the weighted average of the blend at more than 32 months upon the bottling moment. The final fruit proportion is 392 grams of Vroege Tolse per litre of finished Pruim. In total, They've used lambikken from three different barrels and seven different brews.

For this Druif, we macerated Sylvaner grapes from Harth+Harth, for more than four months on an oak barrel. We used two- and three-year lambikken only, rendering the weighted average age of this blend to more than 26 months. The final fruit intensity clocks at more than 584 grams of grapes per litre. Almost 80% of the cereals for the five brews were sourced with our local farmers. A few years ago, we started working with the most progressive low-intervention winemakers around Europe. Harth+Harth is a family-owned Demeter-certified organic winery from Saulheim in the German wine region of Rheinhessen.!"

This Kriek/Mirabelle is a co-maceration of sour cherries and Mirabelle plums on a small oak barrel. 3 Fonteinen let the fruit sit for over three months on two-year old lambik. The fruit blend was later blended with another two-year old lambik before bottling. The weighted average of the blend hits almost 22 months upon bottling. The final fruit intensity is 509 grams of sour cherries and plums per litre.

- 2 bottles `Gewurztraminer` No.35

For this Druif, we macerated the ever fragrant Gewurztraminer grape, harvested in the summer 2022 in Bourgheim, Alsace, on one- and three-year old lambik, for more than four months. The old portion accounts for almost 80%, rendering the weighted average age of more than 31 months. The final fruit intensity is 437 grams of Gewurztraminer grapes per litre of finished Druif. Almost 65% of the nine different lambikken were brewed with local cereals.
