BZART
BZART was created by combining two glorious traditions, the Méthode Traditionnelle for sparkling wines and spontaneous fermentation for lambic beers.
The result is a natural, sparkling lambic beer of Belgian origin. Lambic is a spontaneous fermentation beer and the oldest of the still existing Belgian beers that probably originated around 1300. The ‘Lambiek Oud Beersel’ that serves as the basis for BZART first matures for twelve months in wooden barrels in the cellars of Oud Beersel.
This lambic is bottled with the addition of the ‘liqueur de tirage’ which consists of sparkling wine yeast and sugar for secondary fermentation. The beer then matures in the bottle for at least nine months before it is finished according to the ‘Méthode Traditionnelle’. This process produces fine carbon dioxide that is enclosed in the bottle and makes the lambic sparkling. By applying the ‘remuage’ and the ‘dégorgement’ the yeasts present are removed from the bottle.
Typical for Bzart is that before the final cork and muselet are applied to the bottle, no sweetening is done by adding a ‘liqueur d’expédition’. This results in a BRUT sparkling lambic beer with an overwhelming taste palette.
