The author of this wine is the Ricasoli 1141 winery, recognized as one of the oldest in Italy, as well as the largest currently present in the Chianti Classico area. Bettino Ricasoli was also the great innovator of Chianti, designing and defining its composition and production. Today the winery is led by Francesco Ricasoli, great-grandson of Bettino, and has a property of 1,200 hectares, of which 235 are vineyards. Experimentation and innovation are solid principles of the winery, as are the mission of excellence and the enhancement of the territory. The winery has focused heavily on the latter in particular, placing itself at the service of a multifaceted terroir that is faithfully illustrated in the wines. Chianti Classico “Castello di Brolio” is obtained from 90% Sangiovese grapes, 5% Cabernet Sauvignon and 5% Petit Verdot. The vineyards of origin are located at altitudes between 250 and 450 meters above sea level, with south-west exposure. Already at the harvest, the selection made on the bunches is very strict, so much so that, from year to year, it is easy for the quantity of production to vary. What does not decrease, however, is the quality, a fundamental prerogative of Castello di Brolio. Fermentation and maceration take place in stainless steel tanks for about fifteen days. Malolactic fermentation also takes place in the same container. The refinement lasts about 21 months in French barriques and tonneaux.
