Nose: Immediately rich and fruity. Expect a bouquet of sweet marmalade, sticky toffee pudding, and ripe oranges (a classic Dalmore characteristic). Beneath this is a medley of dark cherries, sultanas, and a hint of apricot from the sherry casks. There's a lovely underlying note of vanilla pod and a touch of cinnamon spice.
Palate: The mouthfeel is typically full and creamy. The initial wave is of Seville orange marmalade and liquid Christmas cake, packed with dried fruits and spices. This develops into flavours of dark chocolate, caramel, and walnut. The influence of the Matusalem sherry casks is prominent, giving a deep, raisiny sweetness, while the Apostoles sherry casks contribute a drier, spicier complexity.
Finish: Long, warming, and satisfying. The finish is dominated by lingering spices (cinnamon, nutmeg), a touch of oak, and the remnants of dark chocolate and orange zest.

The Maturation Process (The Key to its Flavour)
What sets the Dalmore 15 apart is its unique maturation. The whisky is initially aged for 12 years in American white oak ex-bourbon casks. It is then split for a final three-year "finish" in three different types of sherry casks:
1 Matusalem Oloroso Sherry Casks: These impart deep, rich, raisiny, and sweet flavours.
2 Apostoles Oloroso Sherry Casks: Slightly drier and nuttier, adding complexity.
3.Amoroso Sherry Casks: A sweet variant of Oloroso, which enhances the fruity, toffee-like notes.
The final product is a vatting (marriage) of these differently finished whiskies, creating its harmonious and multi-layered profile.
