This is a Japanese Deba knife (出刃包丁) produced by Shimomura Kōgyō (下村工業) from their “Gourmet” (美食家) line. According to the previous owner, the knife was purchased by a family member and kept in storage unused. The blade remains clean and well-preserved, with factory sharpening marks visible. The original box shows significant damage, including wear and deformation, but the knife itself is in excellent unused condition. The Deba knife is traditionally used in Japanese cuisine for fish preparation, including cutting through small bones and filleting.
