Descrizione: Etoile Du Raisin is a wine made from red grapes grown in a biodynamic vineyard on clay-limestone soil. After manual harvesting, the grapes undergo spontaneous fermentation with long maceration lasting 20-30 days in oak barrels. It is aged on the lees for 12 months and then in 500- and 700-liter tonneaux for another 36 months. Etoile Du Raisin is   ruby ​​red in color with aromas of red fruit and spices. On the palate, it is dry, fleshy, soft, and lively, with extraordinary intensity and balance and a very long finish. A small masterpiece. Cascina degli Ulivi is a splendid winery located in the hills of Novi Ligure in the province of Alessandria. It was founded in 1977 by the dynamic Stefano Belotti, a great friend of Nicolas Joly, who can be considered the father of natural wines in Italy. Stefano was only 18 years old at the time, and starting with one hectare of vineyard, with hard work and dedication, he managed to create a winery that today encompasses 22 hectares, 10 of which are vineyards and the rest are planted with wheat and fodder. The project also includes raising cattle and small farmyard animals, and a farm where guests can enjoy lunch and dinner while sampling local specialties and the winery's wines. Stefano Belotti immediately embraced biodynamic farming methods, and his vineyards are free of leaf removal and pruning. Treatments are limited to copper and zinc, and a composite green manure of legumes is sown to naturally fertilize the soil. In the cellar, spontaneous fermentations, indigenous yeasts, and aging in steel tanks or old chestnut barrels are used. Recently, he has expanded his life and teaching project to young people of a rural culture.
