Wine vinegar is a matured product, aging for a long time in large oak barrels that soften its sharpness and over the years bestow it with intense aromas and woody notes.
SABA
The “Saba,” Emiliano name for cooked grape must, is instead a fresh product, used in these lands since the time of the ancient Romans. Local grape must is cooked in the open air for many hours, concentrating it until it becomes particularly sweet and thick. Traditionally it pairs with cheeses and, due to its sweetness, has been rediscovered in pastry for use on ice cream, creams, and ricotta-based desserts.
AGRODOLCE BIANCO
The Giusti White Sweet-and-Sour derives from the gentle pressing of Trebbiano grapes, from which a particularly sweet juice is obtained.
